The RAW WORLD Community News is produced by Living Light as part of our commitment to "creating a global community with raw food at its foundation." Each issue will feature free recipes and information of interest to the raw community.

Here
we focus on our upcoming event, RAW WORLD International Festival of Raw Food Enthusiasts, to be held February, 2004 in beautiful Costa Rica. We have included two very different, fabulous soup recipes, interviews, and articles from RAW WORLD presenters and chefs, as well as travel hints and information about Costa Rica. Enjoy!

2a: Spotlight on Dan Ladermann, President of The Institute For Vibrant Living and codirector of Living Light Culinary Arts Institute and RAW WORLD International Festival of Raw Food Enthusiasts. We asked Dan to tell us why he chose this as the location for Raw World. His answer was,

"This will be our fourth year producing raw retreats in Costa Rica. I love the country with it's natural wonders and beautiful people. The first three years we produced retreats in Costa Rica, we were in a different location, in the mountains. We wanted to be in a bug free environment and the beaches are notorious for bugs, so we settled for a small village in the mountains. That was before we discovered Montezuma, on the Nicoya Penninsula. From then on, we have had no desire to be anywhere else. We have traveled extensively throughout Costa Rica and this is the best! It boasts pristine white sandy beaches, clear blue skies, perfect temperatures, waterfalls, a fun, international town within a short walking distance, and beautiful accommodations -- we couldn't ask for more. The water is warm, even in February. There are monkeys in the trees, iguanas, brown pelicans, various herons and other wildlife, so that you know you are in Costa Rica, yet because it is the height of the dry season, there are no bugs and the weather is predictably perfect.

2b: Spotlight on Cherie Soria, director of Living Light Culinary Arts Institute, author of Angel Foods and Comiendo Pura Vida (Eating Pure Life) and coproducer of RAW WORLD. We asked, "What makes RAW WORLD different from other Costa Rican vacations?"

"This is a chef showcase, as well as an opportunity to hear from a variety of the leaders in the raw community. Because Living Light is a culinary institute, the food has to be the most outstanding, gourmet, organic, raw vegan cuisine. Besides myself and our own amazing chefs, Elaina Love, Matt Samuelson, Alicia Ojeda, and Cassandra Durham, we have Juliano and Chad Sarno -- two other masters in the kitchen, who will be showing their stuff and teaching culinary classes. No other retreat on the planet has this kind of chef line-up. Every night will be a new experience! Also, because this is the 7th retreat we have produced in Costa Rica, we have developed a relationship with the country, the people, and the food. We are connected to farmers who can provide us with the organic produce that makes
RAW WORLD an ORGANIC raw culinary event. It has taken us years to develop the organic contacts we have in Costa Rica. Most food in Costa Rica, unfortunately, is very highly sprayed. We know the man who grows our tree-ripened organic papaya and the people to call when we want a group of men on horseback to go into the mountains and harvest our cherimoya; we have a woman who brings us acki and guanabana from the Caribbean side; we have a mountain of young (untreated, of course) coconuts delivered several times while we are there and a Costa Rican man who is thrilled to do nothing but open coconuts for our guests. I look forward to combining the best location with the best food and making this vacation the best ever for all our guests!

2c: Spotlight on music maestro Jas, of Bhakti Tribe, on his contribution to helping create the muse at RAW WORLD:

"Join us every evening for a community cocreation of music, dance, singing, and celebration. We will play and move bodies at the beach and next to the pool every afternoon and many evenings. Together we join in an (almost) spontaneous musical experience as we celebrate in present time ritual. Bring musical instruments if you have them, otherwise nature will provide us with sticks of bamboo, natural carob rattles and other wonderful instruments of the mother. You will be spellbound and amazed at just how rewarding it is to surrender to the muse. For those of you who love to dance, our music will be further enhanced watching and following your rhythm as we instinctively merge into the perfect composition."

3: The spotlight is on Billy and Tawana Jurek, who have attended events with Living Light in Costa Rica two years in a row and want to return again! Here is what they have to say about their experience there.

"For the past two years we have attended the Living Light raw food vacation in Costa Rica. We travel all around the world and it is rare that we take the same trip to the same country to do the same thing. : "The Older You Get The More You Can Play! " by Prof Rozalind A Gruben H.L.C., R.S.A.

"Most of the declines in physical functioning, experienced as people age, are due to nothing more than inactivity and unhealthy dietary habits. The aging process itself has surprisingly little to do with stiff joints, weak inflexible muscles or poor circulation. Physical activity is as vital to the life of your organism as the foods you eat. Leave your automobile parked in the garage for twenty years and then try to take it out for a drive. Even if the door does not fall off in your hand as you go to step inside, the battery certainly won't turn the engine over! The older people get the less likely they are to be physically active, yet being sedentary contributes to premature aging. With each advancing year it becomes progressively more important to exercise.

In our technologically driven western society, with all its labor saving 'gadgets', moving walkways and automobiles, the human body is in grave danger of becoming redundant. It is never too late to begin taking care of your body. Approach exercise as a time to play, have fun and celebrate your body's ability to move -- whatever your age. Consider developing the healthy habit of "earning" your meals with 10 minutes of movement before each time you eat."

5: Q & A with Dr. Douglas Graham, the world's premier sports nutritionist. He is president of Healthful Living International, former trainer of tennis champion Martina Navratilova and other top athletes, and author of "The High Energy Diet Recipe Guide" and "Nutrition and Athletic Performance". Dr. Graham is a 25-year raw foodist and a highly sought-after lecturer.
Question for Dr. Douglas Graham: What other factors, aside from food, are important to good health?
Answer: "Health and nutrition are closely related. It is impossible to be healthy without first being well nourished. Yet getting enough nutrients relies upon many factors, and not just simply the food you eat. Without sufficient sleep, digestion, hence nutrition, is compromised. Fresh air and sunshine both play a direct role in your ability to absorb and assimilate the nutrients you digest. Physical activity is essential for optimum function of the intestines and colon.
Emotional poise is as important to our digestion as any other factor.

The 150-pound man who is all muscle and no fat needs more total calories than an under-muscled but fat 150-pound man, as muscle is a heavier feeder than fat. The active person will always need more calories than the similarly built sedentary person. Hence, active and well-muscled individuals will consume considerably more calories than their inactive, under-muscled counterparts. While the sedentary person can easily supply sufficient calories into their diet, it is exceptionally difficult for them to consume sufficient nutrients. Sedentary people have much lower calorie requirements than active people, yet many of their nutrient requirements are unchanged. Because of these facts, it is impossible for a sedentary person to actually be well nourished or healthy. Fitness classes at RAW WORLD will be designed to put the fun and play back into our physical activities while challenging each individual to strengthen their weak fitness links."

6: Natural beauty expert, author of "Elaine's Pure Joy Kitchen", and RAW WORLD presenter, Elaina Love says,
"At RAW WORLD I'll be sharing with you some of the secrets I've learned, which are really just common sense. We will do salt rubs with natural salt crystals collected in Costa Rica, make natural clay masks for our skin, and talking about the best ways to care for our hair and body. Best of all, we will have fun!"

Here is a natural beauty secret you can try at home:
Give yourself a relaxing, detoxifying foot bath. Fill a bowl or bucket with very warm water and 1 cup sea salt. Soak your feet for 10-15 minutes. The salt will help to pull toxins from your body. Moisturize your damp feet with coconut oil mixed with a couple drops of lavender oil, then apply clean cotton socks. You'll sleep great and in the morning you'll have nice, soft feet."

7: Fabuloso! Executive Chef, Alicia Ojeda shares her "Some LIke It Hot! Tortilla Soup" recipe. It is in a class by itself! Alicia is the owner of Transformative Cuisine and former Executive Chef for Dreamworks studios. She is now on staff with Living Light Culinary Arts Institute.

Some LIke It Hot! Tortilla Soup
Serving Size: 4

SOUP
2 dried chilies, soaked 4-6 hours
1/2 cup sun-dried tomatoes, soaked 4-6 hours in 1/2 cup filtered water
reserved tomato soaking water
1/2 cup pumpkin seeds, soaked 4-6 hours
4 Roma tomatoes, chopped
2 red bell peppers, seeded and chopped
1/4 red onion
1 cup cilantro, de-stemmed
2 cloves garlic, crushed
2 honey dates, pitted
2 teaspoons solar-dried sea salt
2 teaspoons ground cumin
pinch ground cinnamon
2 teaspoons limejuice
1/2 avocado, peeled and seeded
1 cup filtered water, to use as needed

AVOCADO CREME FRAICHE
1 avocado, peeled and seeded
1 teaspoon limejuice
dash solar dried salt
filtered water to thin

GARNISH
1 1/2 cups corn kernels
1/2 cup cilantro, de-stemmed, minced
2 tablespoons red bell pepper, minced
1/2 avocado, small dice
3/4 cups soaked, salted, and dehydrated pumpkin seeds (pepitas)
12 Red Pepper Dragon Chips, by Cassandra Durham (see recipe next issue, or substitute other raw crispy crackers)

1. To make the SOUP: Drain the dried chilies and discard the water. Remove the stem and seed pocket and discard them. (Only the flesh of the soaked dried chili will be used.) Place the remaining soup ingredients, except the avocado and the filtered water in a blender or Vita-Mix on high speed, until smooth. (Do add the reserved tomato soaking water.) Then add the avocado as much water as needed to reach the desired thickness.
Put the soup in a glass jar or casserole dish and warm it in a dehydrator for an hour.
2. Meanwhile, make the CRÈME FRAICHE: Combine all ingredients for the Crème Fraiche in a food processor. Blend until smooth. Place the mixture in a squeeze.
3. To assemble: Sprinkle the GARNISH ingredients, except for the chips) in individual bowls of the warmed soup and decorate the top of each attractively with a tablespoon of the CRÈME FRAICHE, as desired. Serve with chips.
* This soup will keep in a glass jar or an airtight container in the refrigerator for up to 3 days.

Variation: Omit water and this recipe may be used as an "enchilada" sauce.

"No me gusta." (no may goosta) = "I don't like it"
or "I don't want any."
"Carne" (car-nay) "meat"
Put it together and you have...
"Yo soy vegetariano. No me gusta carne." = I am a vegetarian. I don't want any meat.

A few facts about RawFusion Spa Cuisine:
RawFusion Spa Cuisine was created by master raw vegan chef Cherie Soria, founder and director of Living Light Culinary Arts Institute and author of
"Angel Foods, Healthy Recipes for Heavenly Bodies". It is gourmet raw vegan cuisine designed specifically to support the active lifestyles at RAW WORLD and our RawFusion Healthy Lifestyle Celebrations. RawFusion menus use a maximum of seven ingredients in the entire meal (not including seasonings) with changes in concept, texture, flavoring, and presentation. Although appearance and flavor suggests a feast, the body detects simplicity. RawFusion Spa Cuisine is usually theme based -- so meals are presented as Thai, Mexican, Italian, Japanese, and other familiar regional flavors. Most RawFusion dishes are made from fruits and greens that combine well together. Savory meals may also be created using non-sweet fruits (tomatoes, cucumbers, zucchini, etc.) combined with cruciferous greens (kale, cabbage, etc.) and other non-starchy vegetables. Spicy Mango Soup
Serving Size: 6
This is an absolutely delicious spicy fruit soup that is always a hit. It is served with a dollop of fruit salsa in the center, adding a nice compliment of texture to the otherwise creamy sweet and savory soup.

THE SOUP
1 cup coconut water (or non-chlorinated water)
5 cups mango (or substitute papaya for a less sweet version), peeled and seeded
2 cucumbers, peeled
1 lime, juiced
1/2 avocado
1/4 cup cilantro
1 tablespoon onion powder
1 teaspoon garlic powder
2 tablespoons light miso
1 teaspoon cumin
1/2 teaspoon solar-dried sea salt, or to taste
1/4 habanero chili (optional)

FRUIT SALSA
1/2 cup mango, peeled, seeded, and diced
1/2 cup red bell pepper, seeded and diced
1/2 cup cucumber, peeled, seeded, and diced
1/2 cup avocado, peeled, seeded, and diced

GARNISH
1/4 cup cilantro, finely minced
1 tablespoon Sambal Olek
---------------------------
1. Put ingredients for soup in blender and blend until smooth.
2. Combine ingredients for fruit salsa and gently toss.
3. Place 1/4 cup fruit salsa in center of each soup bowl and carefully pour 1 cup of soup in each, so fruit salsa is surrounded by soup.
4. Attractively garnish each bowl of soup with a sprinkle of cilantro all around and a smidgeon of Sambal Olek in the center.
5. Serve chilled or at room temperature.

11. Common questions about travel to RAW WORLD answered here.

Is it safe to travel to Costa Rica? Costa Rica is a safe place to travel, the people are friendly, and they like North Americans. If you sign-up for any of our RAW WORLD or RawFusion travel packages that includes ground transportation, our driver will meet you at the airport and take you to your hotel. You are never left to fend for yourself!

Does Costa Rica require a passport? Costa Rica has recently changed it's requirements for entry into their country. They now require a current passport for US citizens.

What If I don't have anyone to travel with? No problem traveling alone to RAW WORLD -- you will never be alone unless you want to be! We will assign you a roommate of the same gender who has similar traits to your own (we send out a survey so we can pair you with someone of similar interests.
