Mission Statement

Issue #1, December 5, 2002

This is the first of a series of newsletters being produced by Living Light as part of our credo "Creating a global community based on love and allowance with raw food at its foundation." Each issue will feature free recipes and information of interest to the raw community.

In this first issue of Raw World Community News, we focus on our upcoming event, Raw World in Costa Rica, and we include several recipes and interviews from Raw World presenters and chefs.

2a: Spotlight on Cherie Soria
, Raw World coproducer, author of
Angel Foods: Healthy Recipes for Heavenly Bodies, and director of Living Light Culinary Arts Institute:
"This is the third year Living Light has produced raw lifestyle retreats in Costa Rica. It's a country rich in tropical fruits, friendly people, and great weather. I have traveled all over Costa Rica and marveled at its beauty, but as soon as I walked onto the beaches of Montezuma, on the Nicoya Peninsula, I was captivated. I immediately knew we had to produce a festival there and share it with our raw family. There are miles of beautiful pristine beaches, nature reserves, gentle seas, monkeys playing in the trees, and perfect temperatures. Best of all, we will be sharing it with some of our favorite people in the raw community -- all of you!"

2b: Spotlight on Victoria Boutenko, author of
Raw Family and Twelve Steps to Raw Food:
"Each time I glance at my calendar and see Costa Rica written across February 1-9, I experience a natural high! I visited Costa Rica before. This country is so abundant in top-quality fresh ripe exotic fruit! I can't wait to be surrounded by heirloom organic papayas again!

Whenever I have a chance to live on fresh tropical fruit for a few days I always feel rejuvenated. Swimming in warm ocean waters, sleeping under starry tropical skies, breathing air filled with oxygen and ions recharge my body with endless energy, which lasts for months after.

At big gatherings like Raw World, I always meet lots of new friends. I also have a chance to reconnect with old ones. I am always interested to know what they are doing and where they are going. I constantly learn something new. I will enjoy spending time with the Living Light Family.

2c: Spotlight on Paul Nison, author of The Raw Life and Raw Knowledge
"I am looking forward to Raw World and visiting Costa Rica. I'm excited about being part of such a big raw food event and meeting people from around the world who are traveling to this beautiful place to experience the best of the best. As I travel the country I meet so many confused people when it comes to health and even the raw food diet. One person will say one thing and another will say something else. I'm excited to share my message that each one of us is unique and there is no "one way for everyone." We all agree that raw is the answer but there are many ways to get there. I want to tell people to do what makes the most sense for them and what will get the results they desire. It should not be about being 100% perfect all the time. It should be about being 100% happy all the time. I plan to simplify the messages and topics that many people are so confused about so they will be happy and enjoy the raw life and the raw world."

3: Spotlight on participant Tim Connolly of San Jose, California (the first person to register for Raw World). We asked Tim why he is so enthusiastically anticipating Raw World. His answer:
"I was drawn to the tropical setting, exotic fruit, many wonderful speakers, the chance to get to know some more raw food enthusiasts, and to have a real vacation where for once I didn't have to worry about fending for myself at each meal. With all of this, plus the fact that I had not taken a real vacation in a long, long time, I realized that there was really no way I could NOT go to Raw World. I then committed to myself that I was going to go on this trip no matter what happened in my life!"

4: Natural beauty expert, author of Elaine's Pure Joy Kitchen, and Raw World presenter, Elaina Love says,
"When it comes to beauty care, simple is best. At Raw World I'll be sharing with you some of the secrets I've learned along the way, which are really just common sense. We will be making masks for our skin, skin brushing, talking about the best ways to care for our hair and body, and best of all, we will have fun!"

Here is a natural beauty secret you can try at home:
Skin brush your face for a smooth, clear, complexion. A small vegetable fiber face skin brush from the health food store works well. Just brush your face everywhere in a circular direction every morning. Make sure your skin is not wet when brushing it. Follow up by rinsing your skin with fresh water. Dry your skin and apply coconut oil as a moisturizer, if needed. I'll share some more beauty secrets with you in the next issue. "--Elaina"

5: Tropical fruit smoothie recipe (serves 2)
from juice gurus, Carl Murphy and Judy Genece-Murphy
Combine in a blender and puree until smooth:
water of 1 young coconut
3 oranges, peeled and chopped
1 papaya, peeled and seeded
1/4 pineapple, peeled and chopped
4 bananas

6: Here are a couple of easy Spanish phrases you'll want to remember!
"Donde esta el bano?" (doan-day es-tah el bon-yo) = "Where is the bathroom?"
"Yo soy vegetariano." (yo soy veh-heh-tair-ee-ah-no) = "I am a vegetarian."

Is it a good idea to eat garlic?
A: Garlic contains allicin and mustard oil both of which are toxic and irritating to the delicate membranes of your body. Also a sulfur compound in garlic has been shown to interfere with communications between the left and right hemispheres of the brain. This results in impeding communications between the brain and body as well as interfering with cognitive functions. However, if adding a little garlic keeps you on a raw plant based diet and away from the destruction of flesh and dairy items and cooked food then by all means include it.

However, we are happy to honor your personal dietary requirements and omit garlic, onions, chili, salt, oil, or any other ingredients you prefer not to eat. Simply let us know when you register! 8: Living Light Chef Matt Samuelson on Costa Rica AND one of his favorite recipes:
"I'm really looking forward to returning Costa Rica for the amazing landscapes, rivers, mountains, and ocean. I also love all the people, the wonderful climate, and the bounty available at the farmers markets. One of the great recipes I'll prepare for our participants of Raw World is my famous No-Bean Hummus. Everyone loves it!"

No-Bean Hummus:
2 medium zucchini
3/4 c brown sesame seeds, soaked
3/4 c tahini
1/2 c lemon juice
1/4 c olive oil
5-8 cloves of garlic (or to taste)
2 teaspoons Celtic salt (or to taste)
dash cayenne
1 1/4 teaspoons paprika
Optional: 1 small red or Anaheim pepper

Blend all ingredients, except sesame seeds and tahini, in a blender or Vita-Mix. Add sesame seeds to the mixture and puree until smooth. Add tahini and blend again (or hand-blend tahini if your blender isn't powerful enough.) Enjoy with crudités, on lettuce leaves, or as a spread on flax crackers.
